S’mores brownie cups are so easy to make and a fun take on classic s’mores! They have a graham cracker base, brownie middle, and a pile of toasty marshmallows on top.
Easy & Delicious S’mores Brownie Cups
I bought a kitchen torch a few weeks ago (it had been sitting in my Amazon saved for later item list for months and I finally decided to bite the bullet), and it has suddenly opened up a wonderful world for me. One of these wonderful things is being able to torch marshmallows from the comfort of my own home.
Torched marshmallows = s’mores.
Since brownies are some of my favorite things, I thought it would be great to make little s’mores brownie cups. These are kind of like a s’mores brownie cupcake, with toasted marshmallows on top instead of frosting. They are super easy to make and would be great to enjoy on a warm summer day or night! You could even pack these up and take them camping or on a road trip.
Ingredients Needed
Before getting into ingredients, in terms of equipment you will need a cupcake pan or two. This recipe can make up to 15 s’mores brownies.
For ingredients, you will need:
- Graham cracker crumbs: while you could crush your own graham crackers, totally acceptable here to buy boxed crumbs.
- Melted, unsalted butter
- Brown sugar and granulated sugar
- A box of brownie mix, or use my personal favorite brownie recipe (it’s just as good as the box)
- Mini marshmallows
Optional: a kitchen torch. You can get toasty marshmallows in your oven with the broil setting as well.
How To Make S’mores Brownie Cups
These s’mores brownies are super easy to make! Here’s a step by step guide:
- Make Graham Cracker Base: to make the graham cracker base, mix graham cracker crumbs, butter, and sugars together. Make sure to grease your cupcake pans, and then press around 2 tbsp of crumbs into the base of each.
- Prepare Brownie Batter: follow the directions on your favorite boxed mix or my brownie recipe. Spoon an even amount of brownie batter into each cupcake pan, filling almost full.
- Bake: Bake for around 25 minutes, or until brownies are just about set.
- Add marshmallows: after baking, remove the brownies from the oven and press a small handful of mini marshmallows on top of each. Return to the oven and bake for an additional 2 minutes. Make sure to keep an eye out to ensure the marshmallows don’t burn! After this, you can also use a torch to add a little more toastiness.
- Cool: Let the brownies cool completely before removing them from the pan. Run a sharp knife around the edges to help release them.
Modification Ideas:
- Make mini brownie cups: use a mini cupcake pan instead of regular cupcake pan. Just make sure to reduce the bake time accordingly!
- Add nuts, toffee pieces, or caramel bits into the brownie batter: pretty self explanatory

Easy S’mores Brownie Cups
Ingredients
- 2 cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 tbsp light brown sugar
- 1 tbsp granulated sugar
- 1 box brownie mix
- 1 cup mini marshmallows
Instructions
- Preheat your oven to 350°F and generously grease a cupcake pan. This recipe will yield 12-15 brownie cups.
- In a large bowl, toss the graham cracker crumbs and sugars together. Then, pour melted butter over and fold everything together until evenly combined.
- Press 2 tbsp of the graham cracker mixture into the base of each cupcake pan. Make sure to pack it in there.
- Prepare the brownie mix according to package directions. Spoon an equal amount into each cupcake pan, filling to almost full.
- Bake for 22-24 minutes, until a toothpick through the middle has few moist crumbs. Then, remove from the oven and press a few mini marshmallows on top of each brownie. Continue baking for another 1-2 minutes to melt the marshmallows.
- Remove from oven and let the brownies cool completely before running a knife along the edges and removing them from the cups. Option here as well to use a blowtorch to lightly toast the tops of each brownie cup. Enjoy!
