These apple pie pancakes are a great way to start your fall mornings. They’re dairy-free and full of apples and pie spices. Think cinnamon, nutmeg, and allspice (aka the ultimate cozy spice trio). I serve them up in a tall stack with a drizzle of maple syrup.
If you love apple pie and pancakes then this recipe was designed for you! I take a dairy-free pancake batter, made with a special trick, then load it up with apple pie spices and actual apples. They’re super moist and fluffy, just as pancakes should be.
The secret to making these dairy-free pancakes so tender and fluffy is a dairy-free “buttermilk”. What this means is that I add some apple cider vinegar to a non-dairy milk and let it curdle. This acid activates the baking soda and also adds a little bit of tang to the flavor. I know the word ‘tang’ may come off as unpleasant, but with the sweet apples and fluffy crumb it’s a 10/10.

What You Will Need
- One or two apples, depending on the size. Honeycrisp, Braeburn, or Granny Smith apples are the best to use in my opinion, but they’re your pancakes so use what you want! 🙂 Make sure to peel and grate the apples before adding them to the batter. No grater? Just finely chop them.
- Dry Ingredients & Spices: Flour, baking soda, baking powder, cinnamon, allspice, nutmeg, and salt.
- Non-dairy milk and apple cider vinegar or lemon juice. The type of non-dairy milk you choose actually makes a difference here! You want one that will curdle when combined with acid. Do you ever add non-dairy milk to your coffee and notice it curdle and separate? I can’t even tell you the number of times I’ve added an almond milk creamer to my coffee only to be sad by the little curdled milk particles. These are the ones you want to use. From experience, soy milk or almond milk will give you the best results. Avoid coconut milk, as it doesn’t curdle in the same way.
- Vanilla Extract
- Melted Coconut Oil
- One Egg, at room temperature
- Maple Syrup, as a sweetener
How to Make Apple Pie Pancakes
- Step one is to make the “buttermilk”. Stir together the milk and apple cider vinegar or lemon juice in a liquid measuring cup, small bowl, really anything that can comfortably hold 1 cup of liquid. Let this rest for at least 10 minutes.
- While the milk is curdling, peel and grate your apples, then combine them with ½ tsp of cinnamon.
- Whisk together all of the dry ingredients, and then all of the wet ones.
- Fold the dry ingredients into the wet, making sure not to overmix, followed by the grated apples.
- Cook them in a nonstick skillet or pancake griddle and serve them fresh with some maple syrup or honey.

Spiced Apple Pie Pancakes (Dairy-Free)
Ingredients
- 1 Cup Non-Dairy Milk, Coconut, Almond, or Oat
- 2 Tsp Apple Cider Vinegar
- 1 Cup Grated or Finely Chopped Apples
- 1 Cup Flour
- 2½ Tsp Ground Cinnamon, Divided
- 1 Tsp Baking Powder
- ½ Tsp Ground Nutmeg
- ½ Tsp Ground Allspice
- ¼ Tsp Salt
- 1 Large Egg, At room temperature
- 2 Tbsp Melted Coconut Oil
- 4 Tbsp Maple Syrup
- 1 Tsp Vanilla
Instructions
- In a small bowl or liquid measuring cup, combine the milk and 2 tsp of apple cider vinegar. Let this rest of 10 minutes. This creates a dairy-free "buttermilk" to be used for the pancakes.
- While the milk is resting, peel and grate your apples, then mix them with ½ tsp of the cinnamon.
- In a separate, small bowl, whisk together the flour, cinnamon, baking powder, nutmeg, allspice, and salt. Set this aside to start.
- In another bowl, whisk together the egg, coconut oil, maple syrup, and vanilla. Then slowly add in the milk mixture, whisking continuously to combine.
- Next, add the flour mixture. Whisk it into the wet ingredients until just combined and you no longer see streaks of white. Any more, and you'll end up with tough pancakes.
- Carefully fold in the grated or finely chopped apples.
- Heat a nonstick skillet or pancake griddle on medium heat. To test if it's ready, add a drop of water to the skillet. If it sizzles and evaporates, then your pan is hot enough!
- Grease the skillet or griddle with nonstick spray, and then scoop out ¼ cup portions of the batter. Cook on one side until you start seeing bubbles, then flip and cook for another 45 seconds-1 minute (or as long as needed to be cooked through).
- Serve with maple syrup or honey and enjoy!
