This apple galette is one of my favorite easy fall desserts. Take pastry crust, fill it with pie-spiced apples and bake until golden brown and flaky.
Homemade Puff Pastry Apple Galette
If you’ve ever been craving apple pie, but didn’t want to actually put in the effort to make a pie, then I’ve got the perfect dessert for you! This puff pastry apple galette is so easy to make and tastes like a gooey, flaky, cozy apple pie.
A galette, known as a “flat cake” in French, is a free form dessert that uses a puff or shortcrust pastry as the base. This particular galette starts with puff pastry, and is then filled with sweetened apples and baked in a skillet to get a nice crispy crust. Top it off with vanilla ice cream and/or some caramel sauce and you have yourself an easy-peasy fall dessert!
What You’ll Need for Apple Galette
Equipment
You will need one 10” cast iron skillet. Mine is the Lodge brand and I’ve had it for years! Baking in the skillet helps crisp up the bottom and sides really nicely.
Ingredients
- Apples: you’ll need around 3-4 apples depending on how large they are. See the section below for more details about the best types of apples to use.
- Store bought puff pastry: Yes, store bought is fine and recommended (unless you feel like practicing your homemade puff pastry making skills) 🙂
- Unsalted butter, melted and cooled.
- Brown sugar and granulated sugar
- Lemon juice: use freshly squeezed please and not the type that comes in a bottle. 🙂
- Cornstarch: since the apples will release liquid after mixing them with sugar, cornstarch will help thicken the juices so that your galette doesn’t end up soggy.
- Spices and flavorings: vanilla extract, cinnamon, nutmeg, and allspice.
- One egg, beaten, to use as an egg wash
- Optional: sanding sugar to sprinkle along the edges
The Best Apples for Galettes
The best apples are crisp, firm, and won’t turn into mush when you bake them. I recommend using a blend of different apples to mix and match flavors. My top five favorite apples for baking are:
- Honeycrisp
- Pink Lady
- Granny Smith
- Jonagold
- Golden Delicious
How to Make an Apple Galette
Start by peeling, coring, and thinly slicing your apples. Toss the apples with butter, lemon juice, sugars, and spices, and let that rest while you deal with the puff pastry.
Store bought puff pastry usually comes in a rectangle. To ensure it fits nicely in the skillet, you’ll want to roll it out to a slightly larger 14×16 inch rectangle. Grease your skillet and press the puff pastry into the skillet, draping it up the sides and over the edges. Fill it with the apples, and then fold the edges in and other the apples. Don’t worry if it doesn’t look perfect or pretty! Raw puff pastry isn’t exactly the most aesthetically pleasing thing lol.
Brush the puff pastry with egg wash, sprinkle with sanding sugar, and then bake it until golden brown and puffed up! Best served warm with vanilla ice cream and perhaps a drizzle of caramel sauce?
How Should I Store Leftovers?
To be honest, this apple galette doesn’t keep super well, especially if you have put ice cream on it. However, if you do have some leftover galette, wrap it up tightly and store it in the fridge, warming it up in the oven before eating.

Easy Puff Pastry Apple Galette
This puff pastry apple galette is super easy to make and tastes just like a flaky, buttery, apple pie.
Ingredients
Equipment
- One 10" (inch) cast iron skillet
Crust
- 1 store bought puff pastry
- One egg, beaten (for egg wash)
- Turbinado or sanding sugar (optional)
Apples
- 3-4 large apples, peeled, cored, and sliced
- 2 tbsp melted butter
- 2 tsp fresh lemon juice
- ¼ cup light brown sugar
- ¼ cup granulated sugar
- 2 tsp cornstarch
- 1 tsp ground cinnamon
- ½ tsp vanilla extract
- a pinch of ground nutmeg and allspice
Instructions
1. Preheat the oven to 400℉ and lightly grease a cast iron skillet.
2. Unroll the puff pastry and then use a rolling pin to roll it out into a slightly larger, 14x16 inch rectangle. Press the puff pastry into the skillet, up the sides and draped over the edges.
3. Toss all of the apple ingredients together in a large bowl until well combined. Transfer this into the skillet.
4. Fold the edges of the crust back over the apples. Brush with the egg wash (you will not need all of it) and sprinkle with sanding sugar.
5. Bake for around 40 minutes, until the puff pastry is golden brown and apples are softened and bubbling.
6. Serve warm with vanilla ice cream and optional caramel sauce.
Notes
- When selecting apples, pick a variety that are crisp and won't turn into much after baking. Honeycrisp, granny smith, jonagold, and golden delicious are my personal favorites.
- If you're using frozen puff pastry, make sure to thaw it accordingly to box instructions before using.
